SHRIMP FAJITAS!

SHRIMP FAJITAS! 

This was a GREAT summer meal that honestly LOOKED like it took a lot more time and swearing than it really did! Crowd pleaser all around!!!!



You Will Need:
1.5 - 2 lbs. Shrimp 
(stay on the smaller side, they are easier to put in tortillas) 
2 Bell Peppers
1 Red Onion
2 Limes
1/2 tbsp. Garlic Powder
1 tbsp. Chili Powder
1 tbsp. Cumin
1 tbsp. Paprika
1 tsp. Salt 
1 tsp. Pepper
1 tbsp. Dried Cilantro
Whole Wheat Tortillas 

Optional: 
Avocado
Salsa
Shredded Cheese


Directions:
1. Preheat oven to 450 degrees.

2. Chop bell peppers and onion into very thin strips. If necessary, also peel shrimp.

3. Combine onion, peppers, shrimp, the juice of one lime, and seasoning into a bowl. Stir or cover the bowl with a lid and lightly shake up! 

4. Spray a baking pan and lay the shrimp combination onto it. Spread everything out so that it is lying flat. 

5. Cook for about 10 minutes. 

6. In the meantime, you can slice avocado for a garnish or whip up guacamole. (I do one avocado, lemon juice, salt, pepper, and a "tex Mex" seasoning) 

7. When you have about 1-2 minutes left, brown tortillas on the stovetop.

8. Check the shrimp mixture after 10 minutes. If the shrimp are not fully pink yet, rotate the ingredients around and place back into the oven for 2 more minutes. 

9. When done, top with more dried cilantro and more lime juice! 

10. Make fajitas with this mixture OR over rice OR enjoy by itself!!!
