Healthy Pumpkin Muffins!!!! 

'Tis the season!!! These came out gorgeous and paired as a great side for chili!! Enjoy!!!


You Will Need:

1 Cup Canned Pumpkin Puree
2 Eggs
1/3 Cup Maple Syrup
2 Cups Oat Flour
1/2 Cup Coconut Oil (melted) 
1 Tsp Vanilla
2 Tsp. Pumpkin Pie Spice
1/2 Tsp. Baking Soda
1/2 Tsp. Baking Powder
Dash of Salt

Optional Add Ins: Chocolate Chips, Raisins, Pecans

Directions:

1. Preheat oven to 375 degrees and line muffin pan

2. Whisk together pumpkin puree, coconut oil, eggs, maple syrup, and vanilla

3. Combine the remaining dry ingredients in a separate bowl

4. Add the dry ingredients to the wet ingredients and stir thoroughly; this would also be the time to stir in any extra fun chocolate chips, etc! 

5. Distribute into the muffin pan and bake for 20 - 23 minutes!
