Homemade Butternut Squash Soup!

I was always intimidated by homemade soup recipes, they seemed really involved and long! This was actually super quick and easy, especially if you already have your butternut squash cut up ahead of time. 



You Will Need:

1 Butternut Squash
(or one container of pre-cut butternut squash ;)

1 Cup Vegetable Stock

2/3 Cup Almond Milk

1 Shallot

2 tsp. olive oil 
(or sunflower oil)

1 tsp. Salt

1 tsp. Pepper

1 tsp. Cumin

2 tsp. Minced Garlic

Optional Garnishes: Parsley, Parmesan Cheese, Croutons or a Side of Bread! 


Directions:

1. First, cut (if needed) up the butternut squash and get it soft however you choose - toss in boiling water, steam, or microwave. From there, puree it using a food processor or just your good old blender. (My nutribullet worked fine!)

2. Heat olive oil or sunflower oil on the stove top. Stir in chopped up shallot, minced garlic, cumin, salt, and pepper. Let it simmer for about 2 minutes.

3. Add in vegetable stock and almond milk and allow to simmer for another minute.

4. Lastly add in your butternut squash puree. Allow it to simmer together for a minute and then transfer back to the food processor or blender one more time (you don't want shallot chunks in there!) 

5. Voila! You can serve immediately with whatever garnishes you would like!
