Black Bean Quesadillas!

Black Bean Quesadillas!
Okay, not only was this recipe SO easy and quick, its VEGAN friendly too! Enjoy friends!
I also included the "avocado sauce" I made that we topped them with! Just needed a little change from the traditional guacamole :) 



You Will Need (Quesadillas):
Whole Wheat Tortilla Wraps
1/2 bag or 1 can of black beans
1 shallot
1 jalapeno pepper
1 green pepper
1 lime
1 tbsp. olive oil
Salt
Pepper

Optional: Salsa, guacamole, sour cream, OR sweet potatoes if you want to give this meal even more power behind it :) 


You Will Need (Avocado Sauce):
1 Avocado
Handful of dried or fresh cilantro
Handful of dried or fresh basil
1 jalapeno
1 garlic clove
Juice of one lemon or lime
Dash of salt


Directions (Quesadillas)

1. Heat olive oil on saucepan (simultaneously drain black beans if applicable) 

2. Add chopped shallot, allow to simmer for 2 minutes.

3. Add jalapeno pepper and bell pepper, another 2 minutes. 

4. Add in black beans and also season mixture with lime juice, salt and pepper while allowing to simmer. Stir occasionally.

5. As soon as the black beans are starting to soften or break apart, its more than done! Add mixture to one side of the tortilla and fold in half. 

6. You can opt to put the tortilla back on the stove top and flip it a couple times so that it browns (my husband does this part ;) 

7. Top with any garnishes you would like! Including the avocado sauce below! 


Directions (Avocado Sauce) : 

1. Blend all ingredients together!

2. Keep in refrigerator until ready to serve!
