Football Sunday: Buffalo Cauliflower Bites & Homemade Blue Cheese Dressing!

Confession: I am scared to death of cauliflower. I feel like it is so hard to work with and I am always going to mess it up! I finally decided to go for it and I have to say, I would make some adjustments next time but overall they came out pretty darn good! We cleared the plate, so that certainly says something!!!



You Will Need: 

Cauliflower Bites
- 1 cauliflower or bag of cauliflower florets (I used the bag people)
- 2/3 cup of panko crumbs
- 1 cup skim milk
- 1 cup flour (I used whole wheat flour)
- 1 tbsp. olive oil
- 2/3 cup buffalo sauce
- Garlic powder, salt, pepper

Blue Cheese Dressing
- 4 oz. crumbled blue cheese
- 1/2 cup of plain, non-fat greek yogurt
- 1 garlic clove
- 3 tsp. of lemon juice (or juice of 1/2 a lemon)
- 2 tsp. of white balsamic vinegar
- salt and pepper


Directions: 

1. Preheat oven to 450 degrees and line a baking pain with foil. If you are using a head of cauliflower, cut it down into florets. 

2. Whisk milk, flour, garlic powder, pepper and olive oil together. 

3. Put cauliflower florets in a gallon ziplock bag and pour the batter on top of them. Make sure the cauliflower is coated well!

4. Dump cauliflower into strainer, allowing excess batter to escape. (You do NOT want excess batter)

5. Sprinkle cauliflower with some of the panko crumbs and then transfer them onto the baking pan. 

6. I then sprinkled the rest of the panko crumbs onto the cauliflower once they were spread out on the pan. 

7. Bake for 15 minutes. 

*While cauliflower was baking, I mixed up the blue cheese dressing. See below*

8. Take cauliflower out, and lightly brush them with buffalo sauce. Put them back in the oven for another 5-7 minutes. 

Blue Cheese Directions:

1. Use a food processor or blender and blend blue cheese, yogurt, and garlic.
2. Add in the lemon juice 
3. Add in the white vinegar and a dash of salt and pepper
4. Pulse a few more times, enjoy! 

Notes: 

* I did not get enough of the batter off of the cauliflower, causing it to puddle on the pan and just make it pretty messy, Thankfully it's on foil so you can trash everything, but your overall presentation will just look neater if you do not have that excess

* I also did put another 2-3 tbsp. worth of buffalo sauce on the cauliflower after they came out of the oven both times. It just made them look prettier!

* This was SO much more filling than we expected!!!!
