Toddler Approved Veggie Muffins!!!!
We are on a total applesauce kick at our house for this recipe was perfect! I am also getting Ava over a cold so was trying to load her up with as many veggies as possible!! Huge hit! We ate these for breakfast for a week!!!!!
You Will Need:
1 Cup Applesauce
1/2 Cup Spinach
1/4 Cup Shredded Carrots, also chopped
1 Ripe Banana
1/4 Cup Almond or Oat Flour
3 Tbsp. Coconut Oil
3 Tbsp. Coconut Sugar
1.5 Cups Flour
1/2 Tsp. Baking Powder
1/2 Tsp. Baking Soda
Dash of Salt
Directions:
1. Preheat oven to 350 degrees and line cupcake pan
2. Combine applesauce, spinach, banana, almond flour, coconut sugar and coconut oil and blend until smooth ( I just used our normal smoothie blender)
3. Combine the remaining dry ingredients in a separate bowl
4. Pour the blended green mixture into the bowl of dry ingredients, stir thoroughly
5. Distribute into cupcake pan and bake muffins for 15 minutes!!!
