Cauliflower Fried Rice!
My challengers have been talking about this one for forever and I have been so scared to try it for some reason! Honestly, it was SO much easier and tastier than I was expecting!!!!!!! Win!
You Will Need:
1 Bag of riced cauliflower or a medium head of cauliflower
(I bought a bag of it riced at Trader Joe's)
2 ttbsp. sesame oil
1/2 white onion, chopped
1/2 bag of frozen veggies
1 tsp. minced garlic
2 large eggs
1/4 cup soy sauce
Directions:
1. If doing your own cauliflower, chop it into chunks and pat it dry. Add it to the food processor in a few small batches until it reaches the riced consistency!
2. Heat sesame oil in a large skillet
3. Add onion for 3-4 minutes
4. Add frozen veggies and minced garlic for 2-3 minutes
5. Crack both eggs over pan and mix them in until scrambled
6. Add cauliflower rice and soy sauce
7. Mix everything for another 2-3 minutes
8. You can add chicken, tofu, or edamame to this dish for extra protein! Pictured above is tofu I cooked ahead of time
9. Enjoy!!!!! This also freezes really well!
