Tuscan Kale Lentil Soup (Vegan!)
I'm going to be honest, there are very few ways we LIKE to eat lentils. But I keep trying, because its another way to spice up protein when you already cut out so much. This recipe is finally a keeper!!!!
You Will Need:
1/2 head of kale
6 cups vegetable broth
1 medium sweet potato (peeled and diced)
1 can 14oz diced tomatoes
1/2 yellow onion (chopped)
1 stalk celery (chopped)
1 tsp. red wine vinegar
1 tsp. minced garlic
3/4 cup uncooked lentils
1 tsp. olive oil
dash of salt
dash of pepper
dash of rosemary
Directions:
1. Add olive oil to a medium/large pot over medium heat and add onion, celery and minced garlic.
Cook for about 3 minutes
2. Stir in sweet potato and lentils
3. Stir in vegetable broth and diced tomatoes immediately after
4. Stir in spices, bring everything to a boil
5. Lower heat and simmer for 20-25 minutes (you really just want to make sure sweet potatoes are soft and lentils are cooked!)
6. Add in kale and red wine vinegar and cook for an additional 5 minutes
6. Serve or put in air tight container!
