Coconut Rice with Black Beans & Turmeric!

Vegan - SO easy - and minimal dishes! This is the perfect weeknight meal! We are on a huge turmeric kick, I have been trying to clean out my sinuses and I think the turmeric is doing wonders for them!!!!


You Will Need:
(Yields 2 Servings)

1 Cup Brown Rice Uncooked
2 Cups Water
1/2 Small Yellow Onion
1 Tbsp. Coconut Oil
1 Tsp. Minced Garlic
1 Tsp. Turmeric
1/2 Tsp. Thyme
1 Can Coconut Milk
8 Baby Carrots 
Dash of Salt
1 can of black beans, drained

Directions:

1. Heat coconut oil over stovetop in large pot. Add in diced onions and teaspoon of minced garlic and let simmer until onions are tender, about 3 minutes.

2. Stir in turmeric, carrots, and thyme. 

3. Add in rice, coconut milk, salt, and water. Bring to a boil and then reduce to a simmer, stirring often! Allow to simmer on stovetop for about 20 minutes.

4. Once carrots and rice are almost fully cooked, add in black beans and cook for an additional 5 minutes!
