Spicy Peanut Tofu Stir Fry!
I always make tofu the exact same way, it's fine but it's getting a little BORING! This was an awesome way to spice it up! Vegan AND Gluten Free!
You Will Need:
1 block of tofu ( I usually go extra firm)
1 tsp. salt
1 1/2 cup shitake mushrooms
2 tbsp. olive oil
1/2 white onion
Handful peanuts for a garnish (optional)
1/2 cup Quinoa or brown rice for a base
For the Sauce:
2 tbsp. peanut butter
1 tbsp. sesame oil
2 tbsp. lime juice
1/2 tbsp. minced garlic
2 tbsp. soy sauce
Directions:
1. DRAIN your tofu! If you have never done this read on: place two paper towels or a tea towl on the bottom of a pyrex container. Place tofu on top. Then place two more paper towels or another tea towl on top. Put lid on if it still fits and place something heavy on top, we usually use our fruit bowl. Let it drain for at least 15 minutes!
2. Prepare your sauce! Whisk all ingredients together and make sure onion and mushrooms are chopped and ready to go.
3. Heat the olive oil over the stovetop, add tofu and onion and cook while flipping constantly every 3 minutes. Then toss in mushrooms. Cook for an additional 3-5 minutes
4. Coat the mixture with the peanut sauce. Remove from heat and stir!
