Peanut Butter Sweet Potato Cookies!
Dairy Free - Vegan - and can easily be made Gluten Free! Literally the hardest part of these was waiting for the sweet potatoes to bake and not eating the entire plate! I made these on a Sunday to stay on track with my nutrition but still get a treat!
You Will Need:
3 medium sweet potatoes, cooked
1/2 all purpose flour (or GF all purpose flour)
1/3 cup coconut sugar
1/4 cup natural peanut butter
2 tsp. pumpkin pie spice
1 tsp. vanilla extract
1/2 tsp. xanthum gum
1/2 tsp. baking powder (or GF baking powder)
dash of sea salt
Directions:
1. Preheat oven to 375 degrees
2. Line two baking pans with parchment paper
3. Place all ingredients in a food processor or blender and mix until smooth
4. Dollop 12 cookies onto the 2 pans and flaten the top gently with a fork (you'll see I skipped the fork part but they still looked fine! next time I would make them prettier though!)
5. Bake for 14-16 minutes, rotating cookies halfway through
