Honey Garlic Cauliflower Bowls!

Honey Garlic Cauliflower Bowls! 

You guys! We planned this out ahead of time for Friday night's dinner instead of takeout and it was delicious! Pretty easy too! The only time consuming part is breading the cauliflower, the rest was a breeze!

You Will Need:
1 head of cauliflower
1 cup panko crumbs
2 tbsp. flour
2 eggs
1 tbsp. olive oil
1 cup edamame
1 avocado
1-2 cups of any sort of rice or quinoa (we did brown rice) 
salt
pepper
red pepper flakes and/or sesame seeds for garnish

Optional Sauce:
(I DO recommend this! Only took a second to whip up and it added so much to the bowl! You cannot see it in the photo but I pour it over the rice on the bottom before topping with the cauliflower, edamame, and avocado!) 

7 tbsp. water
2 tbsp. soy sauce
1 tsp. siracha
2 tbsp. honey
1 tsp. minced garlic
1 tbsp. cornstarch


Directions:

1. Preheat oven to 425. 

2. Start by preparing your cauliflower! Rinse & chop the cauliflower into bite size pieces.  (But also be conscious not to cut these pieces too small, it makes it difficult to bread them!)

3. Once the cauliflower is chopped, set up your breading station. You will need one bowl/plate with 2 eggs and one bowl/plate with the panko crumbs & flour combined. I do recommend only doing half of the panko and flour combined first (so 1/2 cup panko crumbs and 1 tbsp. flour) and once it gets messy, take a break and replenish this station. I also added salt and pepper to the crumb plate! 

4. Apply the olive oil to the baking pan and spread evenly. Then begin dipping your cauliflower pieces, first into the egg, then into the panko mixture, and then lay onto the baking pan. (this is the longest step!) 

5. Once the cauliflower is ready, bake it for 22-25 minutes. You do want it to brown, but not burn, so keep an eye on it for those last few minutes! 

6. In the meantime, prepare your whole grain and edamame according to the packages! We use edamame that is already shelled and just goes in the microwave from the frozen food section of the grocery store! 

7. Mix up your sauce if doing so! It's best to combine these ingredients in a bigger bowl so you have room to really whisk everything together! 

8. Prepare your garnishes - slice avocaodo and get out the sesame seed and/or red pepper flakes!

9. Once the cauliflower is done, make your bowls! We put the rice on the bottom, then drizzled the sauce, and topped with cauliflower, edamame, avocado, and garnishes last! 

Notes:
* I experimented with two different pans for the cauliflower, one used pam and one olive oil. The cauliflower with the pam spray was still tasty, but they did not get that pretty browning color the olive oil gave it! For that reason, I'd go olive oil! 

*We definitely taste-tested and added dashes here and there to the sauce! Feel free to have fun with that part.
