Vegan Jambalaya!

Vegan Jambalaya! 
I made this two weeks in a row for our family now because its SO easy, you can make it ahead of time, and you need minimal ingredients for it!!!

Great for a weeknight or a busy weekend!


You Will Need:
2 cups mixed beans (we have used black, kidney, and chickpea)
1 can crushed or diced tomatoes
3 cups vegetable stock
2 cups brown rice (uncooked)
1/2 onion diced
2 stalks of celery diced
1 tsp. minced garlic
1 green or red pepper, diced
1 tbsp. olive oil
1 tsp. basil
1 tsp. oregano
1 tsp. thyme
Dash of salt, pepper



Directions:

1. Sautee the onion on the stovetop with the olive oil. Once tender, add in the celery and peppers. 

2. Add the tomato, vegetable stock, uncooked rice, and spices. Bring to a boil and then lower to a simmer. Simmer until the rice is soft, about 30 minutes. 

3. Stir in the beans and let the entire mixture simmer for another few minutes to mesh the flavors.

4. Enjoy!!!! You can top this with green onions or tabasco sauce but its delicious by itself!
