Pasta in a Pumpkin Sauce!

Pasta in a Pumpkin Sauce! 

So easy. Minimal ingredients. Vegan! 

You Will Need:
8 oz. pumpkin puree (about 3/4 of a can)
2 tbsp. olive oil
1 box pasta (I used Barilla Ziti noodles!) 
1 tbsp. minced garlic 
1/2 yellow onion, chopped
3 handfuls spinach
4 cups vegetable broth
1 tsp. red chili pepper
Dash of salt and pepper



Directions:

1. Combine everything in a large pot on the stovetop (except spinach) and bring to a rolling boil

2. Once boiling, set timer for 10 minutes and stir often so that the mixture does not stick to the bottom of the pot

3. Add in spinach for the last minute of boiling

4. Remove from heat and transfer to another dish immediately (again, so pasta does not sitck!)

5. Serve and enjoy!! We topped ours with parsley!
