Homemade Tomato Soup (Vegan!)
Okay, here's the thing. Soup is an awesome winter meal, but the canned soups have SO MUCH sodium in them and making it yourself is really easy! Minimal ingredients too :) Check it out!
You Will Need:
2 cans fire roasted diced tomatoes (28 oz. total)
1 medium onion
1 tbsp. minced garlic
1 tbsp. olive oil
1 tsp. basil (dried) or 1 handful basil (fresh)
Dash of salt
Dash of pepper
Optional: Chicken broth or milk
Directions:
1. Heat olive oil in a saucepan and add chopped onion.
2. Saute onion for 3-5 minutes, until soft.
3. Add in tomatoes (with the juice from the can) and seasonings.
4. Sautee mixture for another 2 minutes. Like so:
5. Place entire mixture in a blender and blend until smooth (make sure you get all those onions, I had a couple strays!)
6. Return to saucepan and simmer until ready to serve. If you want the consistency thicker, add in milk. If you simply want more soup but same consistency, add chicken broth!
7. Serve with a salad, a sandwich, however you would like!
