Power Edamame Salad!
This was SO easy a great dinner to make ahead of time and keep stored in the fridge! Perfect for those busy weeknights or a grab-n-go lunch!!!!
You Will Need:
1 Cup Shelled Edamame
1 Can Chickpeas
1 Apple
1 tbsp. Olive Oil
1/2 Cup Chopped Cashews
Salt
Pepper
Dried Basil
Optional Dressing:
1 Avocado
3 Tbsp. Lime Juice
1 Tbsp. Apple Cider Vinegar
1 Tbsp. Maple Syrup
1 Tbsp. Olive Oil
1 Tbsp. Ground Ginger
Directions:
1. Cook edamame according to package directions! ( I get the frozen bag, the directions are to just add water and microwave!)
2. Slice up apple (and peel if you'd like!)
3. Heat chickpeas on the stovetop and add olive oil and seasonings. Add cashews after 3-4 minutes and continue to roast until chickpeas and cashews start to brown slightly!
4. Blend dressing with a blender or food processor.
5. Combine apple with the stovetop mixture and then drizzle the dressing over it, mix well!
