Asian Quinoa Salad!

Asian Quinoa Salad!

We love asian food and we love peanut butter, so any recipe with these flavors is usually a win in our house!!!!! Vegan, too! 


You Will Need:
1 cup quinoa
2 cups water or vegetable stock
1 cup shredded carrots
1 cup edamame
1/4 cup scallions
1/4 cup chopped peanuts to garnish (gives it a nice crunch, too!) 


For the Dressing: 
1/4 cup peanut butter
3 tbsp. soy sauce
1 tbsp. honey
1 tbsp. rice vinegar
1 tbsp. sesame oil
1 lime, juiced
Red Pepper flakes

Directions:
1, Cook the quinoa! This requires boiling your liquid first, adding the quinoa, and letting it simmer until it is fluffy! 

2. In the meantime, whisk together your dressing ingredients! It may not be perfectly smooth, like mine, but it didn't make a difference once we mixed everything together!

3. Add in the rest of the ingredients and gently stir until dressing is totally mixed in! Garnish the top with peanuts, scallions, sesame seeds! You can eat this immediately or it does pack well for lunch, too!
