Tofu Tacos!!!!!
Tacos are so easy to whip up together for a quick dinner!!! And Mexican is pretty easy to keep healthy too! If you are not a vegetarian, you can apply this same idea to any chicken, pork, fish too!
You Will Need:
1 package of tofu
1 Avocado
1 Can or 1/2 bag frozen corn
1/2 onion
1 green pepper
1/2 can Black Beans
Tortillias
Salsa
1 lime
Cumin
Garlic
Chili Powder
Cayenne Pepper
Salt
Olive Oil
* Portions are all dependent on how many people you are serving, this was for the 2 of us
** You certainly do not have to use ALL these things, just suggestions! We actually had to skip the peppers and onions due to a toddler breakdown, but life goes on haha!
Directions:
1. Take tofu out of packaging and drain it for at least 30 minutes.
2. In the meantime, chop peppers and onions.
3. Preheat oven to 350 degrees.
4. Drain black beans (and corn is applicable)
5. Chop tofu into small squares and place in a bowl. Mix in 1 tbsp olive oil, the juice of the lime, and the seasonings. Gently toss.
6. Spread tofu out evenly on baking pan. Set timer for 15 minutes.
7. While tofu is baking, cook black beans and corn on stovetop.
8. Saute peppers and onions on the stovetop. This is also a good time to start slicing the avocado!
9. Once tofu is done, flip it and put in the oven for another 10 minutes.
10. Combine everything how you would like for your tacos! Enjoy!
