PB Apple Oat Bites!!!
Super easy and a lot more neat than the raw energy bites since these are baked! ALMOST vegan, but there is a tad dairy in them! If you like apples & peanut butter, you will like these! Enjoy!
You Will Need:
1 apple - peeled & shredded
2 cups oats
1/2 cup peanut butter
1/4 cup honey
1 egg
1/4 cup butter (melted)
teaspoon cinnamon
teaspoon vanilla extract
*Optional - I added chocolate chunks to half of the batch! It worked!
Directions:
1. Preheat oven to 350 degrees and spray a pan with non-stick spray! I use a coconut spray from Target, Market Pantry brand ;)
2. Combine all ingredients and gently stir.
3. Roll into one inch balls and lay on the pan. They really do not expand, so you can put them much closer than I did!
4. Bake for 18 minutes. Be careful not to over-bake, the bottoms will brown!
5. Enjoy!
