Broccoli Spinach Quinoa!
If you've been following me you might have seen that we are trying to eliminate most meat products! It feels good to be honest, but it does require a little more meal prep and effort in the kitchen! This dinner was a success!!!
You Will Need:
1 cup quinoa
2 cups broccoli florets
3 cups spinach
1/3 - 1/2 cup parmesan cheese
1/3 cup pistachios
2 tbsp. olive oil
Juice of one lemon
Salt
Pepper
Directions:
1. Preheat oven to 425 degrees.
2. Chop broccoli (if needed) and place in a bowl. Add olive oil, lemon, dash of salt and pepper and mix together - or if you have a bowl with a lid, put the lid on and shake it up!
3. Spread broccoli out on a baking pan and roast for about 15 minutes.
4. In the meantime, start to boil water for the quinoa.
5. Add quinoa once water is boiling and let it simmer, covered.
6. Peel pistachios (if needed) and roughly chop up spinach.
7. Add spinach to quinoa once it is fully cooked and stir it in until it starts to shrink
8. Add in broccoli, pistachios and cheese.
9. Stir!
10. You may also want to add in more salt/pepper or even a dash of olive oil!
11. Enjoy!!!!
