Black Bean Stuffed Sweet Potatoes!!!!
We're trying this whole less meat, less dairy, more produce type of thing and its going really well! The biggest challenge is getting CREATIVE and PLANNING AHEAD! This one was a combination of things I had left in the refrigerator by the end of the week and we went for it!!!
You Will Need:
(Servings: 2)
2 Sweet Potatoes
1 Avocado
1/4-1/2 Bag of black beans or 1 can
1 White Onion
1 Lime
1 Tbsp. Olive Oil
Salt
Pepper
Any combination of the following spices in 1/2 tsp. servings : Cumin, Chili Powder, Garlic Powder, Onion Powder, Dried Cilantro
*Optional: Sour Cream or Fresh Cilantro!
*Optional: Guacamole garnishes (see below)
Directions:
PREP: If are you using a bag of black beans, make sure to soak them in water the night before. The next morning, let them simmer in at least 7 cups of water for one hour or util they are soft!
1. Preheat oven to 350 degrees. Lightly spray a baking pan and place potatoes on it. Bake for 55 minutes.
2. With about 5 minutes left, heat olive oil on the stovetop. Add in onion pieces and then spices. Once onions are soft, add in black beans.
3. During sweet potato cook time, you can also cut avocado and leave it plain OR prepare it as a guacamole. For me, that involves adding 1 tbsp. lemon juice and 1 tsp. of salt, pepper, and chili powder!
4. Take sweet potatoes out and let them cool for 10 minutes.
5. Slice the sweet potatoes vertically but do not cut all the way through, keep the potato whole and just create an opening! Use a spoon or a fork to take out the middle of the sweet potato.
6. Load in some avocado (or guac), then the bean mixture, then more avocado on top! Garnish with lime juice and/or fresh cilantro!
7. Enjoy! Serve with Salsa or Sour Cream!!!!
