Healthy Chicken Cutlets!!!
These are BANGIN!!!!!! Matt and I both grew up with Italian moms and we LOVE chicken cutlets! I also love having them in the kitchen - they are great not only for dinner but to grab for a quick lunch by themselves, on a sandwich, or cut up in strips on a salad!!!
You Will Need:
- Thinly sliced chicken tenders or breasts
- Panko breadcrumb
- 2 eggs
- 1/4 cup skim milk
- Parmesan cheese
- Variety of Italian seasonings: oregano, basil, sea salt, pepper, garlic, and/or rosemary
Directions:
1. Trim chicken and if necessary, slice it in half so your pieces are small and thin.
2. Preheat oven to 350 degrees and spray cooking pans.
3. Whisk two eggs and skim milk together in a bowl, then transfer to a plate
(preferably something that has a curved edge to it)
4. On another plate, combine panko crumbs, parmesan cheese, and seasonings. The trick is to go HEAVY on the seasonings, light on the breadcrumbs and cheese! The seasonings obviously have the least amount of calories and carbs ;)
5. Take one piece of chicken at a time, dip in the egg mixture, and then dip into the panko combination, flipping to both sides. Gently place on a baking tray.
6. If you keep your pieces small and thin, these should take no more than 20 minutes per side! Keep an eye on when they are starting to brown and make sure to flip them!
7. Enjoy!!
