Almond Crusted Chicken!
This recipe is definitely going into my usual rotation of dinners. It was super easy and so good!
Not going to lie, I am a little scared of my food processor. I have only used it a couple times so I find it intimidating! However, look at how great this crust came out!!! Conquered the unknown and went for it!
You Will Need:
4-6 Chicken Breasts (on the thinner side)
1 cup almonds
1 tbsp. oregano
1 tbsp. paprika
1 tsp. thyme
1 tbsp. garlic powder
1 tsp. salt
olive oil
food processor
Directions:
1A. If you need to trim your chicken and/or cut it into thinner strips, I would do that and wash your hands before starting anything else!
1. Preheat your oven to 375 and spray a baking pan with nonstick!
2. Place almonds and all seasoning in your food processor and turn it on!
It should look like this:
3. Crack an egg and scramble it with a fork, this will be your dipping sauce. Place almond crust mixture out on a plate and smooth it out so it takes up as much surface as possible.
4. Take one chicken breast at a time and go through the following steps:
- Lightly salt both sides
- Dip in egg
- Place on the almond crust dish, cover both sides
- Place on baking pan

5. Once all of your chicken is laid out on a baking pan, lightly coat in olive oil!
6. Bake for 22 minutes on each side! I used a butter knife to carefully flip them over in between.
7. Enjoy!!!
