Today's Menu: Crockpot Chicken Fajitas (21 Day Fix Approved!)
One of my favorite things about the crockpot is that it makes the whole house smell so good! I was craving these for hours beforehand because of the smell :)
You Will Need:
4-6 chicken breasts
2 green peppers
1 onion (white or yellow)
2 garlic cloves
1 tbsp. honey
1 tbsp. apple cider vinegar
1 tbsp. chili powder
1 tbsp. cumin
1/2 tbsp. garlic powder
1 tsp. salt
1 tsp. pepper
1 tsp. paprika
1/4 tsp. red pepper flakes
Whole wheat tortilla shells (optional!)
shredded cheese (optional!)
Directions:
1. Dice up green peppers, onion, and garlic cloves
(2. IF FREEZING, place all contents in a gallon ziplock bag and freeze! Make sure to take out the night before and place in refrigerator so the chicken can defrost.)
3. Place everything in crockpot and cook on LOW for 6-8 hours
4. You can serve plain, in a tortilla shell, with or without cheese, the possibilities are endless!
21 Day Fix Portions:
2 Green containers
1 Red container
1 Yellow container (if using tortilla)
1 Blue container (if using shredded cheese)
