Football Sunday & Crockpot Dinner: Taco Chili!
This is a Miccarelli favorite and one of the easiest crockpot recipes I have ever made. It was originally a WW recipe I found on pinterest and over the past couple of years we have tweeked it a bit! My version is below :)
You Will Need:
16 oz. lean ground turkey meat OR 3-4 thin chicken breasts
1 jalapeno pepper
1 red onion
1 bag of frozen corn
1 can of black beans**
1 can of garbanzo beans**
1 can of dicced tomatoes with and green chiles
8 - 12oz. of plain tomato sauce
1 packet of taco seasoning*
Cumin
Chili Powder
Salt
Pepper
Fresh cilantro
*You can EASILY make your own taco seasoning to keep this more natural if you prefer. This is a 21 day fix recipe:
1 Tbsp chili powder
1 1/2 tsp cumin
1 1/2 tsp paprika
1 tsp oregano
1 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cayenne pepper
**You can also used bagged beans (instead of canned) to eliminate extra sodium. Just make sure to prepare them correctly BEFORE adding to the crockpot!
Directions:
1. Make sure your meat is defrosted. Drain beans and chop onion and jalapeno pepper.
2. Combine all ingredients in the crockpot.
3. Cook on LOW for 8 hours or HIGH for 5-6 hours.
4. When finished, either shred the chicken or chop up the turkey meat in the crockpot.
5. Serve plain (or top with cilantro, cheese or sour cream :) )
Notes:
1. If your chili is a bit too liquidy after cook time, take the top off for a while and continue to leave the crockpot ON.
2. Try not to peek in and stir it up too often during cook time! It takes the crockpot a LONG time to get back up to that original temperature.
