Quinoa Broccolislaw with a Honey Mustard Dressing! 

Quinoa salad is a great staple especially for those of us eating more plant-based or vegan. This is a great way to spice it up when it starts to get boring!


You Will Need:
3/4 Cup Quinoa
1 1/2 Cups Water
2-3 Broccoli Heads (or a bag of shredded broccoli) 
1/3 Cup Shredded Carrots
Handful Fresh Basil

Dressing:
1/3 Cup Olive Oil
2 Tbsp. Lemon Juice
2 Tbsp. Smooth Dijon Mustard
1 Tbsp. Apple Cider Vinegar
1 Tbsp. Honey
1 Tbsp. Minced Garlic
Salt, Pepper, Red Pepper Flakes

Directions:

1. Cook quinoa according to package instructions! Usually, this involves boiling the water, adding the quinoa, and allowing it to simmer on the stovetop.

2. I then removed the quinoa from heat and added the vegetables and basil. I like the broccoli to be more raw but you could also steam it or just mix it in with the quinoa on the stovetop for a minute to heat up. 

3. Combine dressing ingredients and whisk.

4. Pour the honey mustard dressing over the quinoa about 20 minutes before eating so all the flavor can soak up! This will stay good in the refrigerator for at least another day as well!
