Chickpea Tomato Sauce Over Quinoa! 

One of the easiest yet most delicious meals I have ever made! Seriously. I made this last week and Matt is already asking for it again! 

Vegan, too, my friends! 



You Will Need: 
1 cup quinoa
2 cups vegetable stock
1 medium yellow onion (diced) 
2 14oz. cans of chickpeas
2 14oz. cans diced tomatoes (I get the spicy ones!) 
2 tbsp. minced garlic
1 tbsp. tomato paste
1 tbsp. olive oil
Dash of...
Cumin
Red Pepper
Salt
Pepper


Directions:

1. Cook quinoa according to your package directions. Usually its 2x liquid to quinoa, boil liquid first and then add quinoa. Let everything simmer for 15 ish minutes.

2. In the meantime, heat olive oil in a separate saucepan. Add in diced onion and cook until the onion is soft and translucent. Then add in all of the remaining ingredients! Cover and let simmer for 10 minutes. 

3. Mix together however you would like! This is a great meal to eat immediately or to prep for the week ahead!
