Vegan Spring Rolls!

Vegan Spring Rolls! 



Okay, we LOVE doing snack plates instead of a full meal and sort of grazing our way through the night! However, when you take out meats & cheeses that can get a bit tough! (UGH who doesn't just love a good cheese board?!) 

When I came across this idea I was SO excited because it is the perfect snack plate type of food! AND they are guilt free and so quick & easy to make!

You Will Need:
Spring Roll Rice Paper Wraps (found at local supermarket!) 
Mango
Green Pepper
Scallions
Tofu
Avocado
Carrots 

**Mind you, you can really put ANYTHING you want into these wraps! Get creative and use it as an opportunity to get rid of anything about to go bad! 

Dipping Sauce: 
4 tbsp. peanut butter
3 tsp. soy sauce
1 tsp. minced garlic
Dash of siracha
Whisk until smooth!



Directions:

1. If you are adding tofu (or fish) cook as you would per usual before starting! Dice up small.

2. You want to chop all produce either in thin strips or in small chunks so it is easy to pack them in the roll. 

3. Fill a bowl or plate with a good lip with water. You will use this to dip your wraps! Place a tea towl next to the bowl or plate. 

4. Gently place one rice paper wrapper in water and let it sit for about 5-10 seconds. Flip to the other side and repeat. 

5. Transfer the wet wrap to the towel. Fill the center of the wrap with your fillings :) ! 



6. Wrap up the roll folding up the top and bottom first, then the two sides! 

7. Stir up sauce and enjoy immediately!
