Sweet Potato Black Bean Quinoa Bowl!

Sweet Potato Black Bean Quinoa Bowl! 

One of our FAVORITE easy vegan meals!!! So delicious! This meal is also great any time of year! 


You Will Need:
2 small-medium sweet potatoes
1/2 cup quinoa
1 lime
1 cup black beans
1/4 cup plain greek yogurt
1 tbsp. olive oil 
1/4 tsp. honey 
chili powder
cumin
garlic powder
salt 
pepper
dried cilantro (fresh would work too!) 

Directions:
1. Preheat the oven to 425 degrees and peel/chop the sweet potatoes.
2. Combine olive oil, sweet potatoes, and a dash of all spices above in a bowl or ziplock bag to season! Transfer for a baking sheet with cooking spray.
3. Roast the sweet potatoes for 12-15 minutes. 
4. While roasting, cook quinoa according to package instructions! 
5. Once cooked, season the quinoa with the same seasonings as the sweet potatoes plus the juice of half the lime! 
6. Combine the sauce! Mix greek yogurt, honey, remaining lime juice, and the same spices together. 
7. Combine your bowls however you would like and garnish with dried cilantro! We put our quinoa on the bottom and then sweet potatoes/black beans, sauce on top! 
8. Eat and enjoy! If you are making extra for future meals, leave the sauce separate until ready to eat so your dish does not get soggy!

  1. Hey Katie! I tried to comment on this earlier but was having trouble! I wanted to let you know that I am probably making this recipe for lunch next week! Going to try meal-prepping next week, and plan out all (or most) of our meals for May. It's so hard, though, when events happen or unexpected meals out come up. Just have to stick with it!
