Fixate Donut Holes! 

These babies came from Autumn Calabrese's Fixate cooking show on Beachbody on Demand! I had to make one substitution to her recipe which I shared below! They were DANGEROUSLY DELICIOUS holy moly!!! 



You Will Need:
1 cup flour
1 1/2 tsp. xanthan gum *
3/4 cup coconut sugar
1 1/2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. sea salt
1 egg
2 tbsp. coconut oil (melted) 
3/4 cup coconut milk beverage
1 1/4 tsp. vanilla extract

Icing: 
1/2 cup powdered sugar
1 1/4 tsp. vanilla extract
2 tbsp. coconut milk extract 

*After 2 grocery store searches, I substituted chia seeds for this! You just need something binding and they did the trick. Same amount! 

Optional: Donut hole pan! As you can see, I just went with a mini muffin pan instead and it worked great! 


Directions:

1. Preheat oven to 350 degrees. We are NOT spraying the pan!

2. Combine flour, chia seeds, coconut sugar, baking powder, cinnamon, nutmeg and seat salt together. (I stirred thoroughly, Autumn used a food processor! I also used my mixer's bowl so I could then transfer everything without involving a third bowl)

3. In a separate bowl combine egg, coconut milk, vanilla extract and coconut oil. 

4. Add the wet ingredients to the dry ingredients.

5. Mix on an average setting until everything is thoroughly combined! 

6. Scoop out into the pan! An ice cream scoop or just a tablespoon will work fine here.

7. Bake for 10-12 minutes. 

8. Remember, since we did not spray the pan these babies need to be COMPLETELY cool before you think about moving them (minimum of an hour cool time!) 

9. While you are waiting, stir up your icing! Combine powdered sugar, vanilla extract, and coconut milk and whisk together! You may find you need a tad more water or coconut milk, I did add another dash! This can sit out at room temperature until you're ready to use.

10. After removing donuts from the pan, drizzle the icing on top! Voila!! You just made donut holes!!!
