Loaded Sweet Potatoes (Vegan!) 

Such a creative and easy way to eat vegan! We use all these ingredients all the time but changing up HOW we ate them made it fun and exciting! 



You Will Need: (2 Servings)
2 medium-large sweet potatoes
1 lb. extra firm tofu
1 green pepper
1 cup spinach
2 tbsp. olive oil
1 tsp. Sea Salt
1 tsp. Pepper
1 tbsp. Chili Powder
1 tbsp. Cumin
Optional Toppings: Cheese (I used Trader Joe's almond cheese!), salsa, sour cream


Directions:
1. Preheat oven to 400 degrees. Bake both sweet potatoes (still whole, just directly on pan) for 55 minutes. You will hear them sizzling! 

2. Make sure your tofu is drained (or drain it now!) and cube it. Slice and dice green pepper as well.

3. Once potatoes are done, heat olive oil, tofu, peppers and seasoning on the stovetop. Once peppers are soft and the tofu is browning (at least 10 minutes) toss in the spinach. Once the spinach is fully sauteed, they are good to go. 

4. Cut sweet potatoes in half and scoop out the middle. (We saved the middles for our toddler to eat!) Gently scoop the tofu mixture into the potatoes and add your toppings!
