Mexican Zucchini Boats!!!

Mexican Zucchini Boats!!!
Vegetarian AND vegan my friends! These were so easy, filling, and delicious!!!! So, basically, you should make them ;) 



You Will Need: (2 servings)
1 pepper 
1/2 bag frozen corn*
1 cup black beans (rinsed and drained) 
1/4 red onion
2 zucchinis 
brown rice (pre-cooked) 
salt
pepper
dried cilantro
cumin

Optional Toppings: Avocado, Salsa, Sour Cream, Fresh Cilantro, Lime Juice, Cheese

*we used the roasted corn from Trader Joe's! It is already seasoned and added SO much flavor to this recipe!!!!


Directions:

1. Preheat oven to 400 degrees

2. Spray a baking dish or pan. Cut zucchini length-wise in half.

3. Scoop out the inside of the zucchini. (If you have a melon baller, that's perfect! I made an outline of the inside with a knife and then scooped out the middle with a spoon).

4. Drizzle zucchini with olive oil and seasonings.

5. Heat one tbsp. of olive oil on the stovetop, add in chopped onion and peppers. Let them sautee for about 3 minutes. 

6. Add in corn, rice*, and beans. Season the mixture.

7. Fill the inside of the boats with the stovetop mixture. Cook for 20-25 minutes.

8. Top with your choice! Enjoy!

*We left the rice out of our boats and filled them with veggies. Then we mixed the extra veggies with the rice and let that simmer on the stovetop as an extra side!
