Chocolate Peppermint Muffins (21 Day Fix Approved!)

If you want to check out more of her stuff, she has her own cooking channel online called FIXATE! All of the recipes are under 10 minutes too so its not a huge time commitment! 


You Will Need:
1/3 cup unsweetened cocoa powder
1 can chickpeas (15 oz.) - drained & rinsed
3 eggs
1/2 cup honey
1 tsp. baking soda
3 tbsp. coconut oil
1/2 tsp. peppermint extract

Directions:
1. Preheat oven to 350, spray cupcake pan and line with cupcake liners

2. Place all ingredients in food processor or blender and combine until smooth

3. Divide into 9 muffins. (Autumn calls for 12 to stick with the 21 day fix portions, I made mine a little bit bigger!) 

4. Bake for 12-15 minutes. Use a toothpick to test to make sure they are baked all the way through! 

5. Garnish and enjoy!
