Chickpea Salad!

Chickpea Salad! 
Okay, the thing I miss the MOST about vegan eating is being able to really SINK your teeth into a good sandwich! A veggie wrap is just not the same people! So this was our substitute for chicken salad and we LOVED it!! Definitely a new one in our rotation! 


You Will Need:

1 can chickpeas (drained/rinsed)
1/2 cup chopped celery
1/3 cup mayo or avocado 
1/3 cup lemon juice
2 tsp. dill 
1 tsp. minced garlic
8 bread & butter pickles
Dash of salt
Dash of pepper


Directions: 
1. Combine all ingredients and mash! You can gently stir or really get int there and mash, your preference on texture!

2. Serve with crackers or in a sandwich! I add spinach, tomato, and more pickles to my sandwich!
