Teriyaki Tofu Broccoli Stir Fry!

So easy! And Vegan! Double Win :) 


You Will Need:
1 block of extra firm tofu
3 cups broccoli florets
1/3 cup soy sauce
2 tbsp. maple syrup
2 tbsp. water
2 tbsp. rice vinegar
2 tsp. minced garlic
3 tsp. olive oil
3 tsp. corn starch
Salt 
Pepper

Directions:
1. Remove tofu from package and place on a dish towel of paper towels. Place another dish towel or paper towel on top, and then something heavy on top of that. (I usually use a pyrex pan or a couple small canned goods) You want the tofu to drain and release moisture!

2. Preheat oven to 400 degrees

3. Chop tofu. Place tofu in a mixing bowl with 2 tsp. of olive oil, 2 tsp. soy sauce, and 2 tsp. cornstarch, gently combine until tofu is evenly covered.

4. Spray cooking sheet and spread out tofu on half of the baking pan. 

5. Place the broccoli florets in the same bowl and mix with olive oil, salt, and pepper. Spread out the broccoli on the opposite side of the pan.

6. Bake tofu/broccoli for 20 minutes. 

7. In the meantime, whisk together 2 tbsp. soy sauce, water, maple syrup, rice vinegar, garlic, and cornstarch in a saucepan and bring it to a boil. Reduce heat and whisk the sauce thick. Ta-da, teriyaki sauce!

8. When the tofu/broccoli mixture is done baking, combine it with the teriyaki sauce in the original mixing bowl. Gently toss until evenly coated!

9. Serve by itself, over rice, however you like! Garnish with sesame seeds.
