Peanut Noodles with Veggies!
Vegan, too!

This dish was way outside my comfort zone but so much fun! It was an attempt to put a hold on all the healthy Mexican dishes we have been doing and go in a different direction for a bit! 



You Will Need:
Asian rice noodles
shredded carrots
1 bell pepper
2 green onions
2 scallions
1/2 cup peanut butter
1/2 cup water
2 tbsp. minced garlic
2 tbsp. lime juice
2 tbsp. sesame oil
2 tbsp. maple syrup
3 tbsp. soy sauce

Optional Toppings:
sesame seeds
dried cilantro
peanuts (chopped) 

Directions:

1.Whisk together peanut butter, soy sauce, minced garlic, water, lime juice, maple syrup, sesame oil and soy sauce.

2. Cook noodles and drain them. Return noodles to saucepan and add chopped bell pepper, shredded carrots, and scallions.  Gently pour sauce on top and stir. 

3.Garnish with sesame seeds, peanuts, and/or dried cilatnro and serve!
