Vegan Butternut Squash Chili

Vegan Butternut Squash Chili 

There is nothing better than the smell of chili in the crockpot on a football Sunday! This meal was perfect - minimal prep and so filling! 


You Will Need:
- 2 Cups of Butternut Squash (chopped)
- 1 bag or 2 cans of Black Beans
- 2 Cans of Tomato Paste
- 1 Can of Cannellini Beans
- 1 Bell Pepper
- 1 medium onion
- 2 Tbsp. Cumin
-1 Tbsp. Salt
- 1 Tbsp. Pepper
-2 Tbsp. Chili Powder

* you could also substitute one packet of taco seasoning instead of the seasonings listed above*



Directions:
1. Chop and prepare all vegetables! 
(*if using bagged beans, make sure to soak them in water the night before AND still boil them on the stovetop first!) 

2. Combine all ingredients in crockpot

3. Cook on LOW for 6-8 hours, essentially until squash is soft!

4. Top with salsa, avocado, or shredded cheese! Serve with chips or a nice piece of bread!
