Homemade (Vegan!) Tomato Soup!

So easy. Delicious. WHY have I never tried this before?!



You Will Need:
1 onion
2 tbsp. minced garlic
2 tbsp. olive oil (or sunflower oil)
1 can 28 oz. San Marzano Peeled Whole Tomatoes
1 8oz. can plain tomato sauce
1 and 1/2 cups unsweetened almond milk
2 tbsp. Dried Basil
1 tsp. Salt 
2 tbsp. Pepper
Optional Toppings: Croutons, Cheese, or a good old piece of bread for dipping!



Directions:

1. Chop onion - it does NOT need to be finely chopped

2. Heat oil on the stovetop and add chopped onion and minced garlic. Allow it to cook on low for about 5 minutes.

3. In the meantime, open the San Marzano Tomatoes and puree them in a blender or food processor.

4. Add pureed tomatoes, almond milk, tomato sauce, and seasonings to stovetop. 

5. Allow soup to simmer for at least 10 minutes. Stir occasionally. 

6. Before serving, place bowls in the kitchen sink and place a collander over one.  Pour soup slowly and gently into the bowl. This will allow you to get the onion/garlic TASTE without chunks of it in your bowl!

7. Serve with a salad, bread, pasta, whatever you want!
