Vegetarian Stuffed Peppers!

Stuffed peppers are a GREAT option because they are delicious, easy, and a fun way to incorporate veggies! Check out my recipe in this blog with ground turkey, too! 


You Will Need:
4 Bell Peppers
1 Cup Brown Rice
1 Can or 1/3 of a Bag of Black Beans
1 Can or 1/3 Bag of Corn
Tsp. Salt
Tsp. Pepper
Tsp. Chili Powder
Tsp. Cumin
Tsp. Garlic Powder
Optional Garnishes: Shredded Cheese, Avocado, Salsa

Directions:

1. Preheat oven to 375 degrees and cook brown rice on the stovetop. 

2. Combine all seasonings, veggies, and rice in a bowl.

3. Cut peppers in half and remove insides!

4. Lightly spray pan, gently fill peppers with filling. Place them on the pan facing up. 

5. Bake for 30 minutes.

6. Garnish with optional toppings :) 

7. Enjoy! These make great leftovers too!!!!
