Yogurt-Based Lemon Poppy Bread!

I had to give half of this away to our neighbors bc Matt and I seriously could have eaten the whole loaf! While its not "guilt-free", its a much better option than a lot of other sweets and it stay so moist with the yogurt base! Enjoy friends! 


You Will Need:
The juice of 1 lemon
1 and 1/2 cups of flour
1/2 cup of sugar
1/2 cup of organic coconut sugar*
1/4 cup of whole milk
8 tbsp. of plain greek yogurt
3 eggs
1 tsp. baking powder
1/2 cup unsalted butter
6-10 tbsp. poppy seeds 

Optional Glaze:
1/4 cup powdered sugar
1/4 cup lemon juice
1/4 water

*You could do 1 and 1/2 cups of the organic coconut sugar and skip the white sugar all together. I did half and half simply for the "look" - I did not want to bread to get too brown! 


Directions:

1. Preheat the oven to 375 and grease a bread pan with coconut oil or cooking spray.

2. Combine all wet ingredients in one bowl except yogurt (eggs, milk, melted butter, lemon juice) 

3. Combine all dry ingredients in another separate bowl (flour, sugar, baking powder, poppy seeds)

4. Slowly add the wet ingredients into the dry ingredients and mix on high (or whisk vigorously - I had a napping baby so I whisked and it was fine!) 

5. After both mixtures are thoroughly combined add in the yogurt. I suggest starting with 4-5 tbsp. and making sure you like the consistency before adding more! 

6. Pour entire batter into bread pan and bake for 45 minutes.

7. While baking, you can combine and whisk all of the ingredients for the optional glaze but I suggest waiting for the bread to cool for at least 10 minutes before pouring it on top!
