Shrimp & Avocado Salad!

Ok here's the deal! Summer goal is to branch out with different seafoods and proteins in general besides chicken and ground turkey! Love both of those, but we need to spice it up (pun intended ;) 

This salad was a HUGE hit! My husband is a saint and always compliments my cooking but he is still talking about this one from last night and saying how we should have it multiple times per week! AND it was so easy so we definitely could! 


You Will Need:
(Servings: 3)
1 lb. raw shrimp
1 bag of spinach, romaine, or spring mix lettuce
1 avocado
1 english cucumber
1/2 bag of frozen corn or 1 ear of corn
1 pint of grape tomatoes
1 lime
2 tbsp. cajun seasoning
Dash of salt
Dash of pepper
2 tsp. minced garlic

*Toppings are optional and up to your preference and creativity of course! Red onion, shredded cheese, or peppers would all be good too! * 

For the Dressing: 
Juice of one lime
3 tbsp. Lemon juice
3 tbsp. Olive Oil
2 tsp. Lemon Pepper
Dash of Salt
Dash of Pepper
About 1/3 of a bunch of fresh cilantro


Dressing Directions: 

1. Place all ingredients in a blender

2. Blend until cilantro is liquified

3. Store in the refrigerator




Shrimp Directions:

1. Peel shrimp

2. Place all shrimp in a large bowl and season 

3. Gently stir

4. Heat 1 tsp. of olive oil on the stovetop and gently add shrimp

5. Let them cook for approximately 2 minutes and then flip

6. Allow them to cook for another 2 minutes and then flip them back

7. If they are pink/white they are done! If you still see that blueish or greyish tint give them another minute!

8. You can serve the shrimp hot or cold on the salad!
