21 Day Fix APPROVED Mexican Lasagna!

I love Mexican food and I love Italian food, if you do too, this meal will BLOW your mind! It definitely feels more like a "cheat" meal too so the fact that it is 21DF approved is awesome!

A challenger shared this recipe with me in our group and I HAD to give it a shot! There are ways to include beans as well but I altered the recipe a little bit.


You Will Need:
1lb. ground turkey meat
2 green peppers
1 small onion
8 whole wheat soft tortilla shells
Shredded cheese
2 small cans of diced chiles
2 tsp. olive oil
2 Tbsp. chili powder
1 Tbsp. ground cumin
2 tsp. ground black pepper
2 tsp. sea salt 
1 tsp. onion powder
½ tsp. garlic powder
½ tsp. dried oregano

Directions:

1. Preheat over to 375

2. Chop green peppers and onions

3. Heat olive oil on stovetop, add in peppers and onions

4. Add ground turkey meat after about 10 minutes, season with ALL seasonings listed above and add 1/4 cup of water

4. Once the meat is browned, let veggies and turkey meat simmer, covered, for about 10 more minutes

5. Spray a 9x13 pan (DEPTH is important here people) with cooking spray and line the bottom with 4 tortilla shells

6. Add half of the meat/veggies mixture

7. Line with 4 more tortilla shells

8. Add the remaining meat/veggie mixture on top

9. Bake for 20 minutes

10. Remove lasagna, sprinkle with shredded cheese

11. Bake for another 10 minutes

12. Enjoy!!! Serve with salsa, hot sauce, greek yogurt, whatever you want!
