Quiona Mac 'N Cheeeeeese! 

This was a great side, especially for a cold day when you just need some comfort food but you don't want to cheat! I put the entire cheese topping directly on top. It was good, but you will see in my directions below I am going to advise you to do a bit more layering. The top with the quinoa/cheese was delicious, but the bottom of my pan was just plain quinoa. Of course, use your discretion and consider how deep of a pan you are using! 



You Will Need:
1 cup of quiona
1/4 - 1/2 cup of cheddar cheese (shredded)
3/4 cup of milk
2 eggs
2 cloves minced garlic
Panko crumbs (optional)
Broccoli or leeks to mix in (optional) 

Directions: 
1. Cook quiona fully according to directions on packaging (it's usually to boil 1 cup of water for every 1/2 cup of quinoa, covered) 

2. Preheat oven to 350 degrees and grease a cooking dish (coconut oil, pam, etc.) I included mine directly below so you can see how deep it is:



3. Whisk together milk, eggs, and minced garlic (and greens if you are adding them!)

4. Fold in cheese (I know this part looks so awkward, just trust me) 

5. Put about half of your cooked quinoa in the bottom of the pan and then evenly pour out a thin layer of your cheese/liquid mix. (You may need to spoon out some cheese)

6. Repeat the same sequence - quinoa and then the remaining cheese/liquid mix

7. You can cover with panko breadcrumbs too if you want that crunchy mac 'n cheese! 

8. Bake for about 30 minutes, or until you see the edges starting to brown :)
