Healthy Holidays! White Chocolate Cranberry Oatmel Cookies!

I shared these little buggers in our online cookie swap yesterday and tried them out for the first time! Success! Super easy and quick to make, AND hubby approved! (They are a little too addictive though!) I found a similar recipe on pinterest and then tweeked it a bit! 

You Will Need:
1 cup of instant or old fashioned oats
3/4 cup flour (white or wheat)
2 tsp. baking powder
1 tsp. cinnamon
Dash of salt
2 tbsp. coconut oil (melted)
1 egg
1 tsp. vanilla extract
1/2 cup of maple syrup
1/2 cup cranberries
1/2 cup white chocolate chips


Directions:

1. Mix together all dry ingredients in one bowl. (oats, flour, cinnamon, salt, baking powder).
2. Mix all of the wet ingredients together in a separate bowl (coconut oil, egg, vanilla, maple syrup).
3. Gradually combine both mixtures into one batter.
4. Gently fold in the cranberries and the white chocolate chips.
5. Place batter in the refrigerator for about 1/2 hour and preheat oven to 325 degrees.
6.  Line a baking sheet with parchment paper.
7. Drop the batter onto the sheet in about one-inch balls. 
8. Bake for about 13 minutes. 


Voila!!!!

Notes:
 - Depending on how healthy you want these little guys to be, you can use gluten free flour, whole wheat flour, etc. You can also use a pure maple syrup too.

- The original recipe called for dark chocolate chunks. They looked delicious, but I chose white chocolate to make them a little bit more holiday festive. You could always combine both or just stick with the dark chocolate, which is also slightly healthier! I did have to be careful with the white chocolate because it started to slightly brown.

- You can use fresh cranberries or frozen cranberries. If frozen, let them defrost at least halfway first and you want to chop up either one. I actually found baking cranberries in the baking aisle (given the time of year) and they were super easy to work with and did not require chopping. (Again, when looking for the healthiest option go with the fresh ones).
