Today's Menu: Turkey Sausage Sweet Potato Apple Hash!

This is the perfect autumn-themed weeknight dinner recipe! It is quick to make, delicious and nutrition!!!

You Will Need:
2 medium sweet potatoes
1 apple
2 tablespoons of coconut oil
2-4 turkey sausages or 2 chicken breasts
2 cups spinach
1/2 cup yellow onion
Dash of cinnamon, salt, and pepper

Prep Tips:
These are the things I did the night before so that after work we could get right down the business!

1. Peel and chop up sweet potatoes. Store in air tight container in the refrigerator. 
2. Chop up the onion and also store in air tight container in the refrigerator.
3. Peel and chop up the apple and store in air tight container in the refrigerator. 
*I did not peel my apple, I want the extra fiber from the skins!
*If you are worried about apple pieces turning brown, add some water to the container and they will stay fresh!

Directions:

1. Place two large skillets on overtop, each with one tablespoon of coconut oil.

2. Start heating up one of the skillets and add sweet potatoes and app
les. Season with a little salt, pepper, and cinnamon. Cook until softened. Do not panic, the sweet potatoes may brown a bit, that is okay!

3. Start heating the second skillet as the potatoes soften and add your meat! Once the meat is almost completely cooked, add in the spinach. Once spinach is cooked and withered down, add the sweet potato mixture to this skillet. 

4. Season more if you prefer and serve! Enjoy!
