Today's Menu: Healthy Mexican Stuffed Peppers!

We LOVE Mexican food in the Miccarelli house! And the good news is that it's so easy to turn it into a healthy meal instead of a greasy gut bomb! Enjoy :) 


You Will Need:
16 oz. of ground turkey meat
4 bell peppers (any color)
1 white or yellow onion
Dash of salt, pepper, red pepper cayenne, and paprika
1/4 cup shredded cheese 
1 tbsp. coconut oil

Directions:

Prep Work:
- Dice up onion
- Cut the tops off of bell peppers and clean up insides
- Preheat oven to 350 degrees

1. Heat coconut oil over large non-stick skillet; add onion and turkey meat

2. Season mixture with seasonings and stir frequently

3. Once the turkey meat is fully cooked and the onions are soft, scoop the mixture into the empty bell peppers

4. Place the peppers into a deep baking dish (ungreased) and cover with foil

5. Bake for 15 minutes

6. Remove pan, sprinkle each pepper with shredded cheese

7. Bake for another 5-10 minutes or until peppers are slightly soft



Notes: 
 - You do not have to keep the tops of the peppers and cook those! We just did for presentation purposes :)
