Football Sunday: Flourless Chocolate Chip Pumpkin Muffins! 

Guys, these came out SO GOOD! I am going to need to bring some of them to work tomorrow because they are a TAD addicting! Enjoy!



You Will Need:
2 Eggs
1 Cup of Pumpkin Puree
1/4 Cup Almond Milk
1/2 Cup Maple Syrup
2 Cups Rolled Oats
4 Tablespoons Almond Butter
1/2 Cup Chocolate Chips
1 Tablespoon Vanilla Extract
1 Tablespoon Cinnamon
1/4 Teaspoon Baking Powder
1/2 Teaspoon Salt


Directions:
1. Preheat oven to 350 degrees and grease cupcake pan. (I did regular sized but these would be super cute as mini muffins too!)

2. Place all ingredients into a mixer or food processor, starting the with liquid ones on the bottom. Include everything EXCEPT the chocolate chips.

3. Blend, process or mix for one minute, until oats start to smooth out. It is perfectly fine if you can still see them in the batter though! 

4. Gently stir in chocolate chips with a spoon or spatula.

5. Fill cupcake pan, filling each one about 3/4 of the way.

6. Bake for 22 minutes! Enjoy!
