FOOTBALL SUNDAY! Healthy Black Bean Nacho Dip

We love our lazy football Sundays. But with football, comes snacking. And snacking. and snacking! My goal this year is to still enjoy ourselves, but to have some healthier options on hand for all that relaxation and snacking!

My husband honestly could not get enough of this dip and did not know it was a "healthy" recipe until afterwards. It is definitely filling, too!

Look at this masterpiece!



You Will Need:
1 can of black beans
1 cup of light sour cream
1 14.5oz can of diced tomatoes
1 bag of light shredded Mexican cheese
1 jalapeno 

Optional Additions:
Tomato
Cilantro
Peppers
Black Bean Dip Seasoning

Directions: 
1. Preheat oven to 375 degrees. 

2. In a blender or food processor, combine black beans, sour cream, and chopped jalapeno. You may also add some seasoning to this mix - salt, pepper, cumin, etc. I had a black bean dip seasoning that I sprinkled in!

3. Meanwhile, allow diced tomatoes to drain.

4. Gently stir in 1/2 cup - 1 cup of cheese and the diced tomatoes.

5. Spread the dip in a pan about 1-1.5 liters.

6. Cover with foil and bake for 10 minutes. 

7. Remove from oven and sprinkle more cheese on top. Bake for an additional 5-10 minutes or until cheese is melted.

8. Top with your favorite veggies or cilantro if you prefer! Enjoy with chips or veggie sticks - we used pita chips and whole wheat tortillia chips!
