Today's Menu: Avocado Chicken Salad & Veggies



1. Avocado Chicken Salad

Guys, I am OBSESSED with this recipe! It is super filling and satisfying, yet guilt free. It is also so easy to make! Today I put mine in a whole wheat wrap, but you could also make lettuce wraps, dip veggies into it, eat it plain, you get the idea :) 

Ingredients:
- 1/2 lb - 1 lb of chicken, thinly sliced
- 2 Avocadoes
- 1 Apple (optional)
- Grapes (optional)
- Onion (optional)
- Celery (optional) 
- Salt & Pepper to season

(You will notice mine only has grapes and celery, no apple or onion. I usually just play with whatever I have!) 


1. Cut chicken down to thin pieces and bake at 350 degrees for 30-40 minutes. No need to marinate, maybe just season with salt and pepper, even poultry seasoning too
2. Once chieken is cooked and cool, shred it
3. Mix chicken with avocado first so you can really mash it 
4. Add celery, apples, grapes, or onions! 
5. Enjoy!

Surprisingly, I can tell you that the avocado does NOT turn brown! It will stay this pretty green color!

2. Veggie Salad

This is literally me saving produce that will go bad in a day or two if not eaten. It's a mixup of things we needed to eat. In this instance:

- Cucumbers
- Peppers
-Red Onion

1. Chop everything
2. Mix together
3. Drizzle with olive oil
4. Add salt and pepper (you hardly need ANY salt with the onion and oil taste)

This is a salad without the lettuce! Gotta get those veggies in somehow! Enjoy!
