Eggroll In A Bowl!!!! (Vegan Version) 

Funny story - can you BELIEVE I bought a brand new bag of wonton strips which essentially MAKE this meal and then forgot to add them? 

Just going to have to make it again!!!!


You Will Need:
1 Small - Medium Sized Cabbage (shredded or torn into small pieces) 
1/3 Cup Shredded Carrots
1 Pint Sliced Mushrooms
1/2 Cup Edamame (I get it frozen) 
1 White Onion
1 Tbsp. Sesame Oil 
1 Tsp. Minced Garlic
1 Inch Fresh Ginger (grated) 
Sesame Seeds, Green Onions, & WONTON STRIPS to garnish

Directions: 

1. Heat sesame oil on stovetop and add diced onion. Simmer for 3-5 minutes or until onion is soft!

2. Meanwhile, heat and prepare your edamame! Also make sure cabbage is diced and ginger is grated. 

3. Add remaining ingredients and cook for another 7-10 minutes.

4. Add garnishes! Voila!

5. This meal is SO easy and delicious! I will definitely be making this again! If you are a fish eater, it would be delicious with shrimp too!
